Beef quesadillas

A mexican-inspired dish to warm up your evenings by the campfire. These quesadillas use mince beef and vegetables.

  • 250 g Minced beef
  • 1 red capsicum
  • 0.5 green capsicum
  • 1 red onion
  • 1 lime
  • 6 slices Swiss cheese
  • 1 tsp cumin
  • 1 tbsp paprika

Instructions

    Warm the pan over medium heat. When hot, add the oil and brown the beef.

    While the beef is cooking, dice the onion and capsicums in small cubes. Reserve in a bowl.

    When the beef is almost done, add the salt, pepper, cumin and paprika and stir for a few minutes until ready.

    Add the beef to the diced vegetables and squeeze the lime.

    Reduce the heat to low and prepare the quesadillas one at a time. Heat the tortilla on the pan, add the cheese on one side, and add the beef and vegetables.

    When the cheese has melted, fold the tortilla in half and cook a little longer so both sides are toasted.

Notes & tips

You can use a packet of taco pre-mix spices instead of salt, pepper, cumin and paprika. If you want to save some time, you can start preparing the Mexican Salad at the same time by dicing one additional red onion, red capsicum and the remaining half of the green capsicum.
